The Story Behind Veracove Bakery

Baked with intention, family roots, and a refusal to settle for “too sweet.”

The Search for the Perfect Bite

I started baking simply because I couldn't find a dessert out there that tasted good to me. Everything was always overwhelmingly sweet—and as someone who genuinely loves sweets, that was a problem.

When I first started, my cookies weren't winning any awards, but my boys liked them anyway. That turned into a tradition. We started baking for every family birthday, starting with cakes before branching out. The turning point for cookie cakes came from pure frustration with store-bought versions: that thick, overly sugary icing that left my stomach hurting after just a couple of pieces.

So, I set out on a mission to find that exact right balance—buttery enough, soft, but never cakey. And honestly? It did not go well at first. Lol.

I overmixed them so they came out cakier. Then I undermixed them so parts wouldn't cook right. I baked them too short, then too long. My point is, I didn't give up. I kept tweaking, testing, and refining until I got it right. Today, I'm proud of what comes out of the oven. These are cookies and cookie cakes that leave you satisfied after a few pieces, without making you feel weighed down.

Hearing someone take a bite and say it reminds them of their childhood—of when grandma used to bake cookies—is the highest compliment. I always loved that fresh taste of a homemade chocolate chip cookie, and I wanted others to feel that too. Maybe even help make new memories for anyone who didn't grow up with someone who baked.

Ingredients You Can Stand Behind

I use ingredients I can proudly stand behind—real, quality items, nothing that tastes mass-produced or store-bought.

Every single batch follows the exact same steps. I pay close attention to the mix and the process so you get the same great bite every single time you order from Veracove Bakery. I don't obsess over making them look like plastic perfection; I care about the bite. That bite that makes you pause, slow down, and enjoy everything around you. That bite you, your kids, and your spouse look forward to for holidays, birthdays, and even the heavy, hard days when you just need a moment of comfort.

Family, Fitness, and Portion Control

My kids are a huge part of why I do this. Growing up, my parents did everything they could to provide for me and my brother, but they weren't taught how to bake. I wasn't either—thankfully, nowadays, you can learn a lot from a good recipe and a video walk-through if you're stubborn enough to keep trying. I wanted to give my kids something homemade and wholesome that I didn't grow up having.

My wife has been my greatest inspiration through all of this. She is my motivation to make things better, and she balances me out when I'm being my own worst critic. When we bake for our kids' birthdays, we always make sure to include her two children that she lost prematurely. It is deeply important to us and the boys to honor them and make sure they are always remembered and loved.

Finally, my background as a personal trainer taught me a lot about balance. Portion size is crucial. I’m someone who hates wasting food, which means if there's a massive cookie sitting in front of me, I'll eat the whole thing in one sitting. That’s why our signature 2-inch cookies are portion-controlled: you can enjoy one with your lunch today, another with dinner tomorrow, and savor the experience without going overboard.
